11th Annual Taste of Lancaster


Our Kegel's Produce team, was proud to participate in the Annual Taste of Lancaster County. The event was held at the Lancaster Health Campus with over 35 participating restaurants and vendors. The guests were treated to tastes that included delicious bisques, mouth watering roast beef, ham and pork, delectable omelettes, appetizing wraps and salads and scrumptious desserts.
Our taste was Zucchini Scallion Fritters with Mango Papaya Salsa. This healthy and delicious “taste” was a huge hit with the hundreds of people that stopped at our table. Our display of fresh produce was quite the conversation starter!! We certainly appreciated all the compliments that were shared with us all day and were happy to help the Central Pennsylvania Food Bank!!

Zucchini Scallion Fritters


1# zucchini, coarsely shredded 1 large egg
Coarse salt and pepper ½ cup all purpose flour
½ cup olive oil Sour cream – optional for serving
Place zucchini in a colander set in the sink and toss with 1 teaspoon salt. Let drain 10 minutes. Press out as much liquid as possible. Whisk egg in a large bowl. Mix in zucchini, scallions, flour and ¼ teaspoon pepper. Heat oil in large skillet over medium heat. Drop mounds of batter (about 2 tablespoons each) onto skillet; flatten slightly. Cook, turning once until brown. Transfer to paper towel lined plate. Sprinkle with salt. Repeat with remaining batter. Serve immediately with sour cream.

Mango Papaya Salsa


1 papaya, medium diced Juice of 3 limes
2 mangos, medium diced 1/8 tsp. salt
1 small red onion, medium diced 1/8 tsp. pepper
¼ oz fresh chopped cilantro 1 small jalapeno, diced
Combine all ingredients and mix well. Cover and refrigerate overnight for best flavor.
