10th Annual Taste of Lancaster County
The 10th Annual Taste of Lancaster County was held on Sunday, April 30th at the Lancaster General Health Campus. The beautiful spring day brought out many people who were treated to delectable tastes from some of Lancaster’s finest restaurants. The Kegel's Produce team was serving a strawberry and jicama guacamole that received rave reviews. Many people had never heard of or even tasted jicama before so this was especially fun! The recipe is listed below. We diced the items smaller and served it with tortilla chips for the Taste event. Whichever way the recipe is served, it is sure to be the talk of your event!! Strawberry Tostada

3# strawberries, stemmed, ¼’d
4# avocadoes. ½” dice
2# jicama, peeled, ½”
24 corn tortillas
2 cups chopped cilantro
1 ½ cups chile powder
4 tsp. minced jalapeno
1 cup, 8T crumbled queso fresco
½ cup lime juice
24 cilantro sprigs
24 lime wedges

In large bowl, mix strawberries, jicama, cilantro, jalapeno peppers and lime juice. Add avocadoes and fold together gently; season with salt as needed.

Place tortilla on rack of 400 degree oven. Toast until crisp and starting to brown, about 10 minutes.

Place one tortilla on plate, mound strawberry mixture in center of tortilla.

Sprinkle with chili powder and 1 tablespoon queso fresco.

Garnish with cilantro sprig and lime wedge.
